Jason began his career in hospitality when he was 19 years old as a host in Boston for a classic Irish pub, The Kinsale. He gained bartending experience at NEWS, then the premier late night ultra-lounge in the city. This was followed by Boston's Ivy, an Italian tapas bar and restaurant, where he became their floor and bar manager. Later, as Lead Bartender at Clink at The Liberty hotel, he crafted cocktails for large late-night crowds, bartended their popular gallery, jazz and fashion events, and led regular weekly cocktail demonstrations. His time in Boston marked the start of his passion for crafting new specialty cocktails for drinks to complement dinner menus.
Jason subsequently relocated to San Francisco and landed at La Folie, a Michelin-starred French Restaurant as a bar manager, with responsibility for staff training, inventory and financial management. Being in charge of all cocktail creation for their seasonally changing menus allowed him to try out many new concepts, using different consommés, foams and inventive flavor combinations.
Jason will offer up a seasonal and inventive low-ABV drinks menu to complement the food, and assemble a first-class team to provide the best dining experience for our guests at ‘āina.
